Chester Restaurant Owner, Grandfather Dies at 68

Ed Shanahan graduated Chatham High School, lived in Long Valley for 25 years.

Ed Shanahan made his mark on Morris County, living in the area for decades and serving his own customers for a quarter of a century.

The former co-owner of Oliver’s Restaurant in Chester died at the age of 68 surrounded by his family at Heath Village, according to his obituary.

Shanahan graduated from Chatham High School in 1964 before going on to Christian Brother’s College in Tennessee. He lived in Long Valley with his family for 25 years before moving to Pennsylvania.

He and co-owner, the late Andrew Tufts, operated Oliver’s on Main Street in Chester for a quarter century before retiring in 1996. The restaurant is now known as Redwoods Bar & Grill.

Shanahan worked for the Mepco Co. of Morristown and the Black Bull Restaurant in Mountain Lakes before running the restaurant.

He is survived by his wife, Margaret, of 42 years, one son, Edward, a daughter, Colleen, and a loving extended family.
